Instructions to make Tricolour Sweet Boondi Recipe:
- Sieve gram flour in a mixing bowl and occasionally add water to it. The batter shouldn't be too thick or thin. It should be lumps free and free flowing. Keep it aside for 10 minutes.
- Now at the time of frying divide this batter into 3 parts. Mix yellow colour in one part, Orange colour in second part and green in the third part.
- In the meanwhile prepare tge sugar syrup. Add the sugar and water in a non-stick pan. Stir well and cook on a high flame for about 7-8. Here we need this sugar syrup of 1 thread consistency. Add lemon juice to avoid sugar crystals. Once the sugar syrup becomes little sticky, put off the flame and keep aside.
- Now Heat ghee in a pan. You can use a perforated spoon.Over medium flame, hold a perforated spoon a little above the hot ghee and pour some boondi batter on the spoon. Now allow small droplets to fall in the ghee by tapping the edge of the spoon lightly.
- Stir and deep fry the boondis in low to medium heat in the ghee gently. We have to fry boondi till crisp but do not let them change the colour. We don't want them brown at all.
- Take out the boondi on a paper towel to drain off the excess oil. Now put the boondi in the sugar syrup and keep it for some time say 7-8 minutes before taking out from the syrup. Now tricolour boondi are ready to serve and enjoy.
